Do you love food? Do you love all things Oprah? Well you're in luck, because the April issue of O Magazine is going to be ALL ABOUT FOOD. Yes, it's their first-ever food issue, and I'm so excited! And yeah, it's loaded with recipes. We got our hands on one of those recipes, the "Love Sandwich" -- inspired by Stedman, of course.
Ever since I tried the lavender limeade recipe from O Magazine (so many years ago, and I still use it every summer!) I've been a fan of the magazine's recipes. They've got that big flavor/healthy balance going on. So what else can we expect to see in this issue?
Well, what we know so far is we're in for a Q&A with Oprah and Stedman (they dish on Oprah's cooking skilz) and three of her own personal recipes.
Steadman praises his lady's cooking. "But you’re a fantastic cook. You put a lot of love in the work you do, and it crosses over into the food you make. Anything she cooks I really enjoy eating, and I appreciate it very much." Aww, sweet! As Oprah says in her Here We Go column, "For me, there’s nothing better than breaking bread with my nearest and dearest." And if that's the general theme of this issue, I'm in. I hope there are recipes for family dinner -- that's what I could use most of all!
So when -- that's what you're wondering, right? The April issue goes on newsstands on Tuesday, March 13. Days away! But in the meantime we've got one of the recipes just to give you a little taste! Here's what Oprah says about the Love Sandwich.
It became the Love Sandwich because I first started making it just for Stedman. I’ve only made it for a couple of other people, so if you’ve had me make the Love Sandwich for you, you have to be somebody I really care about.
Love Sandwich
Makes 1 sandwich.
Active time: 15 minutes
Total time: 20 minutes
I include whole basil leaves instead of lettuce, which would wilt in the heat of a panini press.
2 tablespoons chopped scallions
½ teaspoon olive oil
2 teaspoon mayonnaise
2 slices seven-grain bread
2 large basil leaves
1 slice pepper Jack cheese
4 ounces thinly sliced smoked-turkey breast
3 thin avocado slices
3 thin tomato slices
Sauté scallions in olive oil over medium-high heat. Spread 1 teaspoon mayonnaise on each slice of bread and top with a basil leaf. Layer the cheese, turkey, scallions, avocado, and tomato on one slice of bread and cover with the other, mayonnaise side in. Place on a panini press set to medium-high and heat until cheese melts, 3 or 4 minutes.
*OMG, wasn't I just telling you about pepper jack cheese?!?
